Layered Potato Cake with Fresh Sage
Soft-Fried Egg, Scallions
I had a leftover potato and some leftover fresh sage from the naked fried chicken with chilled mash side I made recently, decided to thin-sliced the potato using a mandolin to layer in a buttered ramekin with leaves of sage, butter, olive oil salt, pepper, and a hint of nutmeg.
I baked that in the oven, covered at first to steam-cook through the potato, then uncovered to get some crisp to the edges.
I topped that off with a soft-fried egg and enjoyed a simple, quick, and delicious little breakfast that didn't require me running out to the market for ingredients to make this meal.
