All too often I make the mistake of making a new dish without wiring down measurements, so what happens is on that very rare occasion when a get a new dish perfect on the first try, it’s hard to feel confident that I can recreate it exactly.

But otherwise happy to confirm that peaches go very well with Scotch Bonnet peppers, thyme, and rosemary (and that cumin and dried peppermint leaves go as well with carrots steamed in mauby syrup.
