Another Sand™ Seasonings Combo. Another Simply Delicious Dish

 

Cheeseboro Kitchens Sea Sand™ and Island Sand™ (and signature Bim Sauce™) elevate a lobster “cutter” — a Barbadian version of a lobster roll

A Carribean version of a lobster roll proves remarkably tasty.

I took a lobster tail and split it on the underside with scissors. I first poached it underside down in butter seasoned with Cheeseboro Kitchens Sea Sand™ for a couple of minutes. I then flipped the tail top side down, added a bit of water to the poaching butter (having removed some of the butter to use later), and steamed the tail covered for another couple minutes — until the lobster was mostly, yet not fully, cooked through.

I removed the tail from the poaching/steaming liquid, cut it completely down the middle through the shell with a large knife, and removed the lobster meat, dipping the now two pieces of lobster tail in the separated poaching butter, seasoning each with Cheeseboro Kitchens Island™ Sand, and finished them off in a grill pan on high medium heat, about a minute each side.

While grilling I brush the cut sides of a whole wheat salt bread with the same separated poaching butter, and toasted those cut sides in the same grill pan as the lobster.

I intertwined the lobster tail halves on the grilled salt bread, and topped it off with a drizzle of Cheeseboro Kitchen Bim Sauce™, a condiment sauce of a signature blend of Bajan red pepper sauce, mango, and rum flavors.
