Got it into my head how I would do a version of the traditional “fish & chips” as an easy, finger food appetizer.
So I dipped large chunks of whitefish into a batter of sweet potato flour (I couldn’t find just potato flour) — for the “chip” part — baking powder, soda water, ginger beer, and Cheeseboro Kitchens Sea Sand™ seasoning, deep-fried them, and served them with a malt vinegar tartar sauce.
Nicely crispy exterior gave way to aromatically *cakey* coating that clung to glistening, flaky whitefish. All the flavors and textures of the popular fish& chips staple were in delicious full evidence, and made for a very nostalgically fond culinary reference and eating experience.
